Street food vendors absorb rising ingredient costs because they can't safely raise prices

The Bangkok Vendors Association said in March 2026 that holy basil went from 35-40 to 50-55 baht per kg and limes from 3 to 4.50-5 baht each; vendors usually raise a dish by 5 baht and many delay to keep regulars. A Moo Baan Nak Kila market report says a basket went from 4,000 to 7,000 baht since January. A vendor told WIEGO: 'If I raise prices, customers won't make purchases.'

5 ways to tackle it

  • Camera and vision

Bill Card: photo of a market bill becomes a small price card for your cart

After the morning market run, the vendor photographs the receipt. Claude vision reads holy basil at 35 to 55 baht a kg and limes at 3 to 5 baht each, and prints a pocket card for the cart: 'basil up 40% since January, one plate costs 4 baht more'. Regulars read it while waiting, and the +5 baht stops feeling like a trick.

Plate or Price: two big buttons on the cart where regulars vote with a press

Two arcade buttons sit by the cash box: 'same plate, +5 baht' and 'same price, smaller plate'. Each paying customer presses one, and an e-ink tag shows the running tally. By Friday the vendor knows what the regulars actually prefer, with no awkward conversation.

Build with ESP32, 2 arcade buttons, 1.54in e-ink, battery pack, Google Sheet log

  • AI agent

Bulk Buy Agent: groups vendors on one soi into a single weekly wholesale order

Each vendor on the soi ticks what they need on a paper tick sheet that gets photographed, or says it by phone. The agent adds the totals, asks two wholesalers for a bulk price on limes, basil and pork, and sends back one order sheet with each vendor's share and PromptPay QR. Buying together beats each person paying retail at the market.

  • Voice and phone

Market Radio: a phone line that reads today's wholesale prices in Thai

At 4 AM on the way to the market, a vendor dials one number and hears today's wholesale price for holy basil, limes, pork and eggs from the public market price feeds, and which items dropped or jumped. It also says which ingredient to buy less of today. No screen, no app, works on any phone.

Dish Swap Lab: pick a dish and see cheaper swaps that keep regulars happy

The vendor picks a dish and Claude suggests swaps for the costly part: half a lime plus tamarind water, a bit more cabbage in the stir-fry, a slightly smaller scoop of basil with more chili. It shows how many baht each swap saves per plate. The vendor tries one on the cart and keeps the price at the same 50 baht.
